Control of Listeria at Retail Food Establishments

The pathogen Listeria monocytogenes (LM) can cause listeriosis, a deadly disease that primarily affects pregnant women, newborn children, and adults with weakened immune systems. Each year in the United States, about 2,500 people are infected, of which one-fifth die. The foods in which LM has been isolated include ready-to-eat (RTE) delicatessen foods and foods requiring cooking before consumption, such as hot dogs and raw foods including beef, ground beef, turkey, lobster tails and shrimp. LM can be introduced and persist in retail establishments through a variety of means such as incoming food products, packaging, contamination of food- and non-food contact surfaces, poor personal hygiene, customers, and vendors. The presentation also will include information about verification programs and maintenance of a successful LM control program in retail establishments.
